You're doing great! just try not to tie your stems too close to the medium, leaves touching the surface makes them susceptible to pests and disease!
Other than that she's making good progress! as for topping you should usually wait until there are at least 4-5 new leaf nodes on the stem before topping again to prevent airflow issues that might cause mold and mildew (you should also take into consideration when will you flower her, if you top/FIM then enough time to recover is needed before inducing flowering - about 1-2 weeks)! tying her down is your best option after topping, exposing side shoots to more light will produce more "tops" and will increase spread while keeping its' height. Like this you will only need to top a couple of times during early veg then tying/ScroG for the rest of the growth.
There are also plenty of other training methods like HST but as I explained in the previous answer for new growers it's best to experience LST first.
