Based off week 2 day 7, does this look like an over watering issue or something else? This was the first watering where I soaked their containers. While they were in solo cups I tried to keep watering volume low.

Hey buddy, Older and lower leaves turning yellow is a sign of nitrogen deficiency. So you need to feed your baby. But be gentle on dosage.Don’t go for full strength, you can increase later.Happy growing...

Hello, friend! You're experiencing a nutrient issue and overwatering. 👆 Solution to the problem: 1. Water with 100-150 milliliters around the plant, try not to flood your plants and ensure they have good drainage from the bottom of the pot! 👆 2. Set the pH level of your soil to 6.1ph 👆 .... most likely your soil pH is above 6.5ph or below 6ph. Good luck, friend! ✊😇

You need to give the right nutrient ratio at this stage; they need nitrogen. So you have a deficiency of the latter.
