Not clear to me where you are measuring. You need to monitor Both the air in the curing room AND the residual moisture in each jar. I cure and keep all flower in my wine cellar with a 64'F and 50 to 65 RH steady environment. Cooling unit provides air flow and I sometimes add a bowl of water to raise the RH. I have monitors in both the interior of the cellar and in EACH jar of flower to manage RH/ water content of the material. You can get little monitors the size of a quarter for each jar cheap, and a little bigger one for the cellar to be able to see it without opening the cellar. The combo of odors from the cellar from old wine and marijuana is unique but it's the tight control over the temp and humidity that is the bomb for making a wine cellar into a pot cellar!
