Your grow looks good - and yes, VERY bushy! The advice to wait a while between defoliation sessions is simply to see if the plant is reacting badly to it - and yours clearly is not...
The only other thing I would say here is that not getting light into the plant is NOT going to stunt the plant... if you think she's not growing tall enough at this point, what you did with your lights (dimming them) can definitely help - either that or raising them to encourage more of a stretch. Personally, I'd probably take some of those biggies out of there but normally I wait until the plant starts to set her flowers (or, in your case since you're growing a photo, after you flip to 12/12) and then do a defoliation... Those large leaves are needed by the plant to stoke up on the power it's going to need to produce a good crop of buds... I seriously would not worry about the bushiness of it yet UNLESS you're seeing moisture where leaf touches leaf....
