Your drying humidity levels are correct, pushing the inner humidity out slowly from 62 than break to 63 and push it out again at 62 with other breathing breaks is perfect. But I’ll let you find out and experiment the results with these low temps (too low in my opinion from my experience).
Curing humidity is too low and the temp is way too low again.
For storing, it’s like a good bottle of wine, but in jars.
