One of my plants has been growing significantly slower than the others right from the get go, and then during this week I noticed how it finally popped it's second set of leaves, only there was two sets of leaves. So the question is, do I have a twin or is this just normal?

Looks interesting, if she gets some seeds instead of thinking of it as bad try to see if she passes the mutation on or if its a random event, most mutations wont go on with genetic code but some might so i would look into it. Its interesting to say the least. And shes looking good too.

Since she is in a big pot, you are most probably experiencing over watering. The issue is that when there is an excess of water in the soil, the roots can't take oxygen (they are literally drowning) and the plants growth rate slows down to a craw until the excess water is gone (usually evaporation). Stop watering the pot, which can take a couple of weeks.

Looks completely normal. Small suggestion: don't spray your leaves. You may not be, but the leaf has some residue on it that could have been from rain or a number of different things. Getting the leaves wet can burn your leaves and also make it harder for her to perspire. If she doesnt sweat, she won't drink. If she doesn't drink, she won't grow etc. Looks like you're in good shape though, keep it up!
