No, don't defoliate, removing healthy green leaves will reduce your plants capacity to produce energy and this will slow growth obviously.
If you are super keen on "scrogging" your plant, topping it further would cause the branches to grow more, making it easier to train them, but with the small size of your pots, leaving them alone would probably be best - they are probably on the verge of being "root bound" and waiting much longer for lateral growth will just compound problems. Also, the branches are relying on those big leaves to make the energy they need to grow, so removing them would just slow the growth of the branches.
Anything with Black Domina in it is going to stay (more or less) compact, so as "Chucky" mentioned, probably not the ideal strain for "scrogging". You could also try either reducing the light or moving it further away so that your plants "stretch" for a while until you are satisfied with the canopy, then increasing the light or moving it closer again when moving to flowering. I am however worried by the lack of room for your plants roots in those small pots and leaving them be and going to flowering sooner rather than later, might be your best option. Your previous decision to defoliate is also another reason why branch growth has been slow, it is all about energy production and removing leaves will reduce energy production, which then slows growth.
Remember - maximum amount of healthy green leaves = maximum energy production = maximum growth.
