You must have a basic AC Infinity. See if you can add the digital controller to your fan. This allows you to program the humidity and temperature you want. Then the fan will turn on and off as needed to maintain the parameters you set. With four fabric pots in the tent your pots should be evaporating almost all the moisture you need once you stop running the fan continuously. Even though your plants might not have roots to the edge of the pots, thorough watering the edges will create a natural moisture reserve that evaporates over the next day humidifying the air. --- I use 3:1 Ocean Forest and pearlite in my grows and it has worked great. I started with Happy Frog but get better results with Ocean Forest. And, do not add peat moss. It's already in your potting soil so why add more. Pearlite has the benefit of improving drainage and aeration. Couple that with fabric pots and you can gain some of the benefits of hydro with the ease of soil growing.

I use a inkbird humidity controller. They are designed for reptile but you connect a humidifier and a dehumidifier to it. Set it up for the median RH you want.

I have used the wet towel method as well and it will dry overnight. One option is to have the towels bottom bit in a bucket of water and a fan pointed at it. This will continue wicking the water up and the fan will help evaporate it out. then just refill the bucket as needed. You could also place a humidifier in the tent. One option for managing the RH is turning the fan higher and getting a inkbird or other device that turns the fan on when RH or temps get to high. I use AC infinity product and it does this for me, all in one, its nice. As for temps they might stay Fluctuating for the time as the room is not insulated. 68-65 is a tad on the low side. Could always place a space heater in their if it was really bothering you. One thing to note is to try and not let the soil stay to moist in lower temps. molds thrive in that environment. Best Of Luck!
