no fan leaves really hurt you here. you mostly have small fan leaves that never grew out much and some sugar leaves. sugar leaves are not as effective with photosynthesis, more so for flower, and 1000x less effective in stems.
Without photosynthesis humming efficiently, ripening wil be slow. Any damage to canopy is that much more of a bigger factor.
you wont haevevsuch a high leaf to bud ratio either.. your plant may have sacrificed soem bud production just to eke out a few leaves after you heavily defoliated it. have a reason to remove a leaf. don't do it without a good reason.
take it now.. wait a few more days.. probably isn't going to make much of a difference. You still ahev some green leaves remaining, so you can try... make sure it doesn't die on the stem.
10% amber is an early window harvest. That's fine. But should be all over, not just the top cola. You could take the top off and let the lower stuff ripen more.. if still ripening much per day.
