it's tricky trying to ph-test water that is absorbed into something... runoff is your best bet, but even that won't always be highly accurate relative to what is actually in the rockwool.
because of the large open pockets of air in rockwool, those soil-type sensors may or may not work well.. might want to email the company and explain what you want to stick the probe into and see if that will cause any issues. if you get full contact, should be fine, relative to those types of sensors... again, they have their issues not unlike measuring runoff.
i'd definitely find some real life examples of any probe's use with rockwool... see how it works for them before you bother.
