To start the plants are pretty , full and green! I can tell you put a lot of thought into your environment as well, great work! The droopy leaves tell me overwatering may be a factor; just be sure each time you water to give it a couple days to fully dry out, these plants enjoy their dry time just as much as the fresh drink when they finally completely dry out. This should perk your plant up. In regards to defoliation; I would wait until your plant develops more. Once they start to stretch (it will be obvious), begin with the big lower fan leaves and undergrowth (bottom 1/3 of plant) so the plants Energy can focus on canopy growth. They look great! Keep up the great work!

It looks fine, lots of new exposed bud sites which is good! Its bent very close to the grow medium, which will make watering difficult if you don't want to wet the stems and leaves at the same time. I would bend down the main branch in a spiral shape personally, so you can keep it even without it growing way far out to one side. I would avoid taking more leaves untill you have a nice healthy canopy. When bud sites emerge for flower, just remove large leaves for airflow and to uncover growth tips/new flowers.
