Wow, thats a couple of big bushes! Try a few leaves first, see how they respond. Does it stress them out or do they keep developing? If they'll keep on going, continue to defoliate, but only a little bit every day and skip a day sometimes. Or maybe do the plant on the left on day 1, and than right on day 2, left on day 3, etc. Select the most troublesome leaves to remove. Plan ahead. Big leaves at the top in the middle of the canopy, blocking bud sites, are primary targets, lower big fan leaves also in the middle of the canopy are secondary targets, as removing them, helps to increase light penetration and airflow. Side leaves, not blocking any bud sites and small leaves are usually not a target. Try tucking leaves away if possible (instead of cutting them of), maybe perform a bit of LST to spread the branches. Make sure every bud side has at least a good pair of medium sized leaves to deliver energy for bud development.
Anyway, the idea is to clear things up a bit, but without imposing too much stress on them.
