Should I remove some of the branches and leaves from a 7’ plant that gophers ate 75% through the stalk and roots through the bottom of a fabric pot? The plant still looks fairly good .

If you still have a fair amount of plant left i would clean her up and then let her keep on living. She'll make it known if there's been too much damage. Clean up where's it was attacked and then cover the area with a small gauge chicken wire to try to stop a 2nd attack. You can also have peppermint around which they hate the smell of...either essential oils or plant peppermint in the garden in the future.
