Hi! I am 2 weeks out from my seeds getting wet. Everything seems to be progressing OK. I'm thinking of transplanting the pots to their final homes tomorrow. Thoughts? Too soon?

I would say go for it. The root base is typically twice as big as foliage. So you are due very soon. Try not to distrub the roots too much to avoid shock.

I would let it go a little longer maybe 5 days.....my rule of thumb is when leaves are past the edge of the jiffy pot it’s time to Transplant....don’t want to do it too soon.

Curling Cotyledons? 2 day old seedlings.I have seedlings in jiffy pellets and am concerned as the cotyledons are curling downwards. I suspect the pellets are too wet right now and am letting them dry out a bit before watering again. I am following AC Infinity's lighting schedule with 100% light 18/6 @ 36 inches.
