Lollipopping is a great technique, but its only purpose is to remove lower branches that are completely trapped in the shadows. We do this so the plant forces all its energy into the top canopy.
However, if your plants are still on the smaller side (especially that short, squat one), taking off leaves right now will just rob the plant of its "solar panels." If stripping the bottom leaves you with a bare stick, she won't have the energy to build big buds later! โ๏ธ๐
As for the height difference: That is just the beauty of Ancestry/Genetics! Even seeds from the same pack can have different "phenotypes." One might be short and bushy, the other tall and stretchy. If the tall one gets too close to the light, just gently bend the main stem down (LST) to keep the canopy even.
