Hi everyone hope you are doing well. Should I just trim some of the fan leaves so the nodes can get proper light or should I leave the leaves as is? I have noticed that I am working a bit rough with her and wondered if it would be kinder to just remove some of the extra foliage.

You could but since she is still small I'd leave them on for now until she gets a boost. LST your plant for the time being you'll see those lower nods stretch upwards once you have multiple tops I'd then remove excess leaves.
