a free app for measuring light can be useful. they are not accurate measurements but they are precise -- meaning under the sun or any 1 specific light (or those with exact specifications) it will read a consistent and dependable value. measure X klux or Y "DLI" "PPFD" when it remains healthy (not really either on a phone, since it is technologically incapable of such measurements, these are simply klux factored by soem one-size-fits all value that does not fit all) -- these values, if the plant remains upright can be used in future to ensure you don't kill it with sunlight early on. Make sure to start at least thet low 'next' time. .. pay attention to how long it takes to adapt and how you increase intensity each day to toughen her up... same process.. keep using the phone app and track what you do. can fine-tune / improve it each time.

btw, on day 4 that seedlng wasn't dead. just move it out of sunlight, prop it up with a toothpick or anything else similar and it'd probably be fine in less than 24 hours standing on its own. if you didn't toss it or didn't leave it out in sun even longer etc... it could definitely recover when you see this happen in future.

the substrate isn't saturated constantly, right? unlikely damping off based on pictures. that is microorganism infecting, weakening stem and it should be mushy or slimy if it is damping off. so, this is more likely light intensity.. more shade.. it's just a seedling. too much light can absolutely make a seedling flop over like that while looking fairly healthy otherwise, which yours does. try keeping it indoor for a bit longer, then baby it a bit more as it is exposed to sun and nature. slowly expose to more.

Use shade cloth till the plants are big enough to be placed inside the full sun.

Its called damp off. A little cinnamon sprinkled around youg plants, stops this from happening. Or you can by some no damp from a nursery. Cinnamon is just as good though.
