I purchased some plants from a local dispensary. I have a few strains, and each plant has a labeled stake in it with the name, date planted, and a # 2, or #3 on them. Ex. Lilac Diesel #3 planted 09/08/21 what does this mean?

As far as I know, those are just slightly different forms of the strain. While they are creating these strains, they are picking them out of hundreds of seeds that are germinated. each generation, they'll remove the plants that didn't grow as desired, and keep the ones that the grower likes. this is why one strain can end up with a #1, #2, #3, and so on and so forth. they're just different 'variants'. sometimes you might not be able to find detailed information about what sets each 'variant' apart from each other.
