I guess I don't see your problem here... you've tied the ties to the pot itself, yes? So the plant can't actually BREAK those ties... what the plant looks like it's doing is bending back up growing towards the light which is what you want... it's saying it's not having a difficult time with the LST and that you're doing it correctly! LST is a constant effort to train growth where you want it... and at some point, you can stop - but that point comes when YOU are satisfied the plant is growing the way you want it to.... if it's not, add more ties... but if you're expecting the plant to lie down flat and stay there, it's not going to - that's not the nature of growth... the tip of the stem or branch will always be trying to get to the light and, since your light is over their heads, they will be growing UP...
There is no "right" way or "wrong" way to LST... there is only the way you choose. Personally, I don't LST when the plants are this age - but that's my choice... I wait until they're in pre-flower and then pull the branches away from the stem and my plants always have a Christmas Tree shape to them - but that's fine by me... If I was intending to SCROG, it wouldn't be... It's whatever you choose, mate... you're doing fine!
