Upon the start of week six, I have noticed some bud sites... Is it ok to trim off the huge fan leaves to allow more light to get through?

Yes a long as you’re not stripping her down. If the stems are still flexible enough you could consider LST. But be aware that some plants could not react positively to the stress and it could delay the harvest
