I don't know if some defoliation should/can be done?

So this is my first grow. I mixed my growing media 2 parts peat moss to 1 part fox farm ocean forest in five gallon pots. I am wanting to grow organic and have an all purpose 4-4-4 fertilizer and my other fertilizer is 2-5-3.
